Ingredients

  • 225g (2 sticks, or 1 cup) butter, room temperature
  • 150g (3/4 cup, packed) light brown (demerara) sugar
  • 1 tsp vanilla extract
  • 2 tbsp liquid honey
  • 1 large egg, room temperature
  • 280g (2 1/4 cups, spooned & scraped) all-purpose (plain) flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 100g (1 1/2 cups) desiccated coconut
  • Filling
  • about 1/3 cup raspberry jam
  • 60g (1/2 stick, or 4 tbsp) butter, room temperature
  • 1/2 tsp vanilla extract
  • 125g (1 cup unsifted) powdered (confectioners’) sugar
