Ingredients
- 2 Packages or possibly cakes yeast
- 1/2 c. hot water
- 3/4 c. lowfat milk
- 1/4 c. sugar
- 1 teaspoon salt
- 2 tbsp. soft shortening
- 1/2 c. minced nuts (or possibly 1/4 c. nuts and 1/4 c. raisins)
- 1/2 c. cut-up candied fruit
- 3 c. flour
Directions
- Crumble or possibly sprinkle yeast in hot water; stir to dissolve. Scald lowfat milk; add in sugar, salt, and shortening and mix. Cold to lukewarm. Add in lowfat milk mix to yeast. Combine fruits and nuts with flour; add in to liquids and mix to blend well. Scrape down batter from sides of bowl. Cover and let rise in hot place, 30-45 min, or possibly till doubled. Stir down; spoon into four No. 2 greased cans, filling 1/3 full, or possibly into one bread pan, 5 x 9 x 3 inch. Cover and let rise till dough is within 1 inch of top of cans. Bake 30-40 min in quick, moderate oven (375 degrees). Remove from cans or possibly pan and cold on racks. Brush tops with confectioners' sugar frosting (1 c. confectioners' sugar mixed with 2-3 Tbsp. hot lowfat milk), allowing icing to dribble down the sides. Decorate with nuts and candied fruits.
