  • 1 lb skinless New Zealand hoki fillets
  • 1 lb sweet potato peeled, cooked Salt to taste
  • 2 x egg yolks
  • 6 x spring onions finely minced
  • 2 Tbsp. minced coriander
  • 1 x green chilli seeded, and finely minced Freshly-grnd black pepper to taste seasoned flour
  • 2 x egg whites lightly beaten with
  • 1 whl egg
  • 2 c. dry breadcrumbs
  • 1 Tbsp. Cajun spices - (to 2 tbspns) to taste Oil for frying

Directions

  1. Microwave the hoki on full power for 4 min or possibly foil bake in a moderately-warm oven 400 degrees for 20 min. Cold, drain and flake. Mash the sweet potato and add in hoki, egg yolks, onions, coriander and chilli. Mix well and season to taste with salt and pepper.
  2. Form roughly into bite-size cakes - the mix is quite soft and holds together well. Dip first in seasoned flour, then in egg mix and finally into the breadcrumbs mixed with Cajun spices. Fry in batches in warm oil till crisp and golden. Drain on kitchen paper and keep hot. Serve with a spicy Mexican tomato salsa.
