Ingredients

  • 4 x egg whites
  • 1 c. skim lowfat milk
  • 1/2 c. plain low-fat lowfat yoghurt
  • 1/4 c. fruit juice
  • 2 x grated apples rind & juice of 1 lemon
  • 1/2 c. currants
  • 1/2 c. minced prunes
  • 3 tsp baking pwdr
  • 1/2 c. sultanas (golden brown raisins)
  • 11/20 c. wholemeal flour
  • 1 c. rolled oats
  • 1/2 c. oat bran
  • 1/2 c. baking bran
  • 1 tsp cinnamon
  • 1/2 tsp allspice

Directions

  1. Preheat oven to 350F, prepare pans. Lightly beat the egg whites, add in lowfat milk, lowfat yoghurt & fruit juice. Pour the lemon juice over the grated apple to prevent browning. Add in the lemon rind & all the fruit to the wet mix, combine well. Mix together the flour, rolled oats, brans, b/pdr & spices. Add in the dry mix to the wet mix till just combined. Spoon into pans & bake for 25 mins.
  2. Makes 12 muffins.
