  • 1 Tbsp. butter (or possibly trans-fat free margarine or possibly Plugra)
  • 1/2 c. thinly-sliced green onions
  • 6 lrg Large eggs
  • 3/4 c. full-fat cottage cheese (4% milkfat variety)
  • 3/4 c. heavy cream
  • 1/4 c. water
  • 1 c. grated Cheddar cheese
  • 1/2 tsp basil
  • 1/4 tsp freshly-grnd white pepper
  • 1/4 tsp paprika

Directions

  1. Heat butter or possibly Plugra in a heavy non-stick surface skillet. Add in green onion; cook 5 min over low heat, stirring occasionally.
  2. Combine Large eggs, cottage cheese, cream and water in mixing bowl; beat at medium speed till smooth. Stir in cheddar cheese, basil and pepper; pour mix into skillet.
  3. Cook, covered tightly, over medium heat 15 to 17 min or possibly till knife inserted in center comes out clean. Sprinkle paprika over top of quiche and garnish with strips of green onion tops, if you like.
  4. Serve from skillet or possibly slide onto serving platter.
  5. This recipe yields 8 servings;
