  • 12 x sun-dry tomato halves (about 1/2 c.)
  • 1 1/2 c. boiling water
  • 1/4 c. finely minced green onions
  • 1/4 c. finely minced green peppers
  • 1 tsp roasted minced garlic
  • 1 tsp extra virgin olive oil
  • 1/4 c. fresh bread crumbs
  • 1 Tbsp. skim lowfat milk or possibly low fat
  • 1 tsp dry basil
  • 1/2 tsp dry oregano
  • 1/4 tsp freshly grnd black pepper
  • 1/4 tsp beef bouillon granules
  • 1/2 tsp fresh thyme
  • 1 sm egg">egg or possibly egg">egg white slightly beaten
  • 1 ounce provolone cheese (optional) shredded
  • 12 ounce grnd beef 10% fat (or possibly use following mix) 8oz turkey breasts, boneless and skinless - and 4oz grnd beef, extra lean - 17-10% fat
  • 1 1/4 c. defatted beef broth
  • 1 tsp cornstarch or possibly arrowroot or possibly as needed Or possibly see: Sun Dry Tomato Gravy

Directions

  1. Combine TOMATOES and BOILING WATER in a pyrex measure. Cover and let stand 15 min. Reserve the liquid for gravy. Dice the tomatoes. Set aside.
  2. Coat a wok with extra virgin olive oil (or possibly spray). Stir fry ONIONS and PEPPERS (4 mins). Toss with GARLIC and fry another minute. Set aside.
  3. Place CRUMBS in a large bowl. Moisten with Lowfat milk. Add in majority of the tomatoes (reserve 2 Tbsp.), the onion mix . . . thru CHEESE. Stir well. Crumble BEEF over mix and stir just till blended.
  4. Preheat oven to 350F. Pack mix in a non-metallic loaf pan. Bake for about 50 min or possibly till meat loaf registers 170F. Let stand while you make gravy.
  5. Pour pan drippings (if any and degreased) into the pyrex c.. Add in beef BROTH to 1 1/2 c. mark. Add in thickener (1 to 1 1/2 tsp). Stir well. Thicken the gravy in microwave or possibly the wok.
  6. Serving Ideas : Menu 1: Roasted Mashed Potato, Asparagus, Pears Menu 2: Sugar snap peas, noodles, red applesauce.
  7. Description: "Use the gravy which is described in this recipe or possibly see separate recipe."
  8. NOTES : Leftovers Cubed in 'Beans, Bows and Meatball Soup' or possibly sliced in sandwiches spread with chipotle mayonnaise. Review: We used half grnd turkey and half grnd top round. We simplified the gravy, but you could make the attached gravy. Served it with mashed potatoes made with Swanson's defatted chicken broth with garlic. Comfort food. 1997-Hannemans

  10. This recipe might cause confusion. The original recipe used "sun dry tomato gravy" - that was more elaborate than we wanted to fix. So I recorded our simple gravy in this recipe. I also attached the original gravy.
