Directions

  1. 1. Cut off excess fat from chicken pcs. Loosen the skin way from the meat (this helps the basting sauce to reach the meat underneath).
  2. 2. Sprinkle chicken with salt and pepper.
  3. 3. Mix together and blend well the oil, tomato ketchup or possibly chili sauce, wine or possibly lemon juice, the garlic and the herbs used.
  4. 4. Place chicken pcs on rack. Brush on both sides with basting sauce.
  5. 5. Grill chicken for 12 to 15 min on one side, brushing with basting sauce from time to time.
  6. 6. Turn chicken over. Brush again with sauce.
  7. 7. Grill chicken for another 12 to 15 min or possibly till chicken is done and juices run clear when pierced with fork. Preparation time: 15 min. Cooking time: 30 min.
  8. TIPS: Fresh minced parsley can be substituted for fresh basil. You may marinate the chicken pcs in the sauce before grilling.
