Ingredients
- 2 tbsp. flour
- 1 teaspoon seasoned salt
- 1 sm. onion, minced
- 1/4 teaspoon oregano
- 2 tbsp. veg. oil
- 3 med. zucchini, thinly sliced
- 3 tomatoes, cut into eighths
- 2 teaspoon instant chicken bouillon granules
- 1/2 teaspoon dry basil
- 3/4 c. water
- 1 clove garlic, chopped
- 2 whole boneless chicken breasts, cubed
Directions
- In small bowl combine flour, bouillon granules, seasoned salt, basil and oregano. Stir in cool water till combined. Set aside.
- In large skillet or possibly wok stir fry the onion and garlic in the warm oil till tender. Remove onion and garlic. Set aside.
- Stir fry the chicken in skillet or possibly wok 5 min. You may need to add in more oil. Remove chicken. Set aside.
- Add in zucchini. Stir fry 5 min. Add in bouillon mix and tomatoes. Cook and stir till mix is bubbly. Add in the chicken and onion-garlic to wok. Cover and cook 1 minute more. Serve over pasta or possibly rice. Garnish with chow mein noodles if you like.
