Ingredients
- 3 x Hard, ripe tomatoes
- 1 x English cucumber
- 1 x Green sweet pepper, seeded
- 1 x White onion, or possibly 3 green onions
- 1 Tbsp. Extra virgin olive oil
- 1 Tbsp. White wine vinegar
- 1 Tbsp. Lemon juice
- Â Â Salt and freshly grnd black pepper
- 3 ounce Feta cheese, broken into small pcs
- 12 x Black Kalamata olives
- 2 Tbsp. Minced fresh oregano, or possibly parsley or possibly 2 tsp dry
- Â Â Romaine lettuce leaves
Directions
- Cut tomatoes into wedges and then in half. Place in salad bowl. Coarsely chop cucumber, green pepper, and onion. Add in to tomatoes. Combine extra virgin olive oil, vinegar, and lemon juice. Season to taste with salt and pepper. Pour over vegetables. Sprinkle feta cheese, olives, and oregano over top. (If using dry oregano, rub between palms as you sprinkle on salad.) Toss well. To serve, spoon into romaine lettuce leaf-lined bowl or possibly toss with torn romaine leaves.
