Ingredients
- 3 c. diced turkey
- 6 c. turkey or possibly chicken broth
- 1 stick butter
- 4 tbsp. minced onions
- 2 c. diced potatoes
- 1 c. diced carrots
- 1 c. minced celery
- Salt & pepper to taste
- 1 pkg. frzn French style green beans
- 1 teaspoon oregano
- 2 tbsp. chopped parsley or possibly flakes
- 3 1/3 c. half and half light cream
- 4 tbsp. flour
Directions
- Heat the butter in a large pan and cook onion till transparent. Stir in curry pwdr and cook a minute longer. Stir in potatoes, celery, carrots, broth and salt. Bring to a boil; lower heat and simmer 15 min. Stir in green beans, turkey, oregano and parsley. Cook 15 min, till vegetables are just tender. Combine cream and flour and stir in gently till blended. The soup should be slightly thick. Check seasonings. Serves 8 to 12 people.
