Directions

  1. In large pot or possibly Dutch oven combine lentils, rice, broth, water, garlic, onion, celery and parsley. Add in seasonings (including lemon juice) and bring to a boil. Turn heat down and simmer 40 min. Add in carrots and simmer 10 min. Add in potatoes and simmer another 15 min or possibly till potatoes and carrots are just tender. Add in extra water if needed.
