Directions

  1. Peel and dice potatoes. In large saucepan, heat butter. Add in onion and green pepper, and cook till tender. Add in potatoes, water and seasonings. Cover and simmer till potatoes are tender. Make paste of flour and 1/3 c. water. Add in to potato mix. Add in lowfat milk and cook till slightly thickened. Stir in undrained corn and diced ham. Heat through. Before serving, sprinkle with minced parsley. Makes 6 servings.
