Hearty Beef Vegetable Soup

Ingredients

  • 1/2 pound lean beef
  • 2 c. water
  • 1 1/2 tbsp. wine vinegar
  • 2 c. chicken stock
  • 1/2 stalk celery, chopped
  • 1 sm. onion, chopped
  • 1 sm. green pepper, seeded & cubed
  • 1/4 c. yellow turnip, peeled & diced
  • 1 tbsp. fresh parsley
  • 1 bay leaf
  • 1/2 c. spaghetti noodles, broken
  • 1 c. canned salt free tomatoes
  • 2 teaspoon salt free tomato paste
  • 1/2 teaspoon dry thyme

Directions

  1. Place meat and water in large pot. Bring to boil and cook, uncovered for 5 min. Add in stock, vegetables, garlic, parsley and bay leaf. Bring to simmering, cover and simmer 1 hour. Add in remaining ingredients, cover and simmer for 30 more min. Stir and let stand uncovered for 10 min before serving. Makes 6 servings. Each serving equals approximately 125 calories.
