Hearty Baked Spinach And Tofu Recipe

Ingredients

  • 8 ounce. tofu, liquid removed
  • 1 lg. onion, minced (2/3 c.)
  • 2 cloves garlic, chopped
  • 2 tbsp. veg. oil
  • 1 (14 1/2 ounce.) can Italian tomatoes, cut up with juice
  • 1 teaspoon dry oregano, crushed
  • 2 c. cooked brown rice
  • 1 (10 ounce.) pkg. frzn minced spinach, thawed and liquid removed
  • 1/3 c. shredded Swiss cheese
  • 1 tbsp. toasted sesame seeds
  • 2 tbsp. slivered almonds
  • Minced peanuts or possibly canned onion rings

Directions

  1. Place tofu in blender; blend till smooth. Smooth consistency is important to the appearance of this dish.
  2. Saute/fry onion and garlic in oil till soft. Add in tomatoes and oregano. Boil at least 2 min. Stir in tofu, rice, spinach, 1/4 c. of cheese, 1/2 tsp. salt and 1/4 tsp. pepper.
  3. Place in individual ramekins or possibly put it all into 1 1/2 qt casserole. Bake uncovered at 350 degrees for 30 min. Top with remaining cheese and sesame seeds. 6 servings.
