Healthy Mustard Greens Soup

Ingredients

  • 2 cloves chopped garlic
  • 1 tsp chopped ginger
  • 1 medium onion, chopped
  • 2 tbsp olive oil
  • 1 package mustard greens
  • 2 cups prepared garbanzo beans
  • 1 medium tomato
  • 2 cups vegetable broth
  • 1 cup water
  • 1 tbsp peanut butter
  • 1 tsp soy sauce

Directions

  1. Saute onions, garlic and ginger in oil over medium heat in soup pot
  2. Add greens, tomato, and beans and cook for 2-3 minutes
  3. Add soy sauce and stir in thoroughly
  4. Add broth, water and peanut butter and bring to boil
  5. Cover and simmer for 15 minutes
  6. Add salt, pepper and chili to taste
