Ingredients
- 3 c. finely shredded green cabbage
- 1/2 c. minced dry-roasted peanuts
- 1 x minced green chili (optional)
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 2 Tbsp. extra virgin olive oil Salt to taste
- 3 Tbsp. fresh lime juice
- 1/4 c. minced cilantro
Directions
- In a salad bowl, mix cabbage, peanuts and green chili. Set aside. When ready to serve, heat extra virgin olive oil in a small frying pan over medium heat. When warm, put in mustard seeds. As soon as mustard seeds begin to pop, add in cumin seeds and let crackle for 3-4 seconds. Turn heat off and immediately add in oil-mustard-cumin seasoning to salad mix. Add in salt and lime juice. Mix well. Garnish with cilantro.
