Ingredients

  • 2 x Large eggs
  • 1/2 tsp salt
  • 1/2 tsp white pepper, freshly grnd
  • 1/4 c. sesame seeds
  • 17 whl black peppercorns, coarsely crushed
  • 4 x salmon (4 ounce.) steaks, cut 1 inch thick
  • 1/4 c. unsalted butter, melted
  • 4 x lime wedges liquid warm pepper sauce, to taste

Directions

  1. Preheat broiler. Beat Large eggs lightly; beat in salt & white pepper. Mix sesame seeds & black pepper in a separate bowl. Dip steaks in egg mix, then press into sesame seed mix to coat completely on both sides.
  2. Lightly oil broiler pan, arrange steaks well apart in pan. Broil 4 to 5 inches below heat source 5 min or possibly till browned; turn & broil 5 min longer or possibly till flesh is opaque & flakes readily when pierced with a fork. Arrange on a warmed platter, top with melted butter, garnish with lime wedges & serve with warm pepper sauce on the side.
  3. Makes 4 servings.
