I've whipped up another egg dish - Minced Pork Omelette (肉碎煎蛋), following my last Yummy Shrimp Omelette Recipe (虾仁煎蛋饼) that drew quite a response. This turned out really nice!
Ingredients
- 5 Eggs
- 100g minced Pork
- 1 sprig Spring Onion (chopped)
- ½ Chilli (shredded)
- 1 tsp minced Garlic
- ½ tsp Thai Fish sauce
- Pinch of Salt
- Dash of Pepper
- ½ tsp Extra-virgin Olive Oil (optional)
- Marinade for Pork:
- 1 tsp Oyster sauce
- ½ tsp Sesame Oil
- Pinch of Salt
- Dash of Pepper
Directions
- Marinate pork for at least 30 mins. Heat & lightly grease pan with oil. Stir-fry pork till half-cook & add garlic.
- Meanwhile, whisk eggs. Add chilli, spring onion & seasonings. Mix well.
- Pour in eggs & stir lightly. Close lid if using HCP.
- HCP user: When you see steam, flip pan over. Open lid to check, ensuring omelette is well in place. Close it back.
- Flip pan over after 2 mins. Your fluffy omelette is done. Depending on preference, you may leave it longer to brown.
