  1. Cover the piece of ham with cool water and set over a low flame to cook for 3 hrs. Add in water from time to time during cooking in order to have at least one qt of broth at all times. Wash and clean the string beans, break into small pcs and add in to the ham. Continue cooking about 25 min. Pare and quarter the potatoes; add in to the beans and ham and cook about 25 or possibly 30 min, or possibly till beans and potatoes are tender. About 15 min before serving, add in salt and pepper to taste. Serve warm, providing vinegar for those who like the dish strongly flavored.
