Ingredients
- 1 pound grnd cooked ham
- 1 pound grnd pork
- 1 1/2 c. fresh bread crumbs
- 2 Large eggs beaten
- 1 c. lowfat milk
- 2 (8 1/4 ounce.) can pineapple slices
- 3/4 c. brown sugar, packed
- 1/4 c. vinegar
- 1/2 teaspoon dry mustard
- 1/2 c. shredded Cheddar cheese
Directions
- Combine ham, pork, crumbs, Large eggs, lowfat milk; mix lightly. Drain pineapple; reserve 1/4 c. juice. Divide mix into 8 equal portions and shape each portion into 2 patties. Place 1 pineapple slice between 2 patties, seal all around edge. Punch hole in center with finger. Place on broiler pan. Combine brown sugar, vinegar, juice, mustard. Blend well. Baste ham rings with sauce. Broil 9 inches from heat 15 min; baste twice. Turn. Broil 15 min on other side, basting twice. Top with cheese. Broil till cheese is melted.
