Ingredients
- 1 quart. fresh or possibly canned tomatoes
- 1/4 teaspoon black pepper
- 4 med. potatoes, cut in cubes
- 1 sm. head of cabbage, cored & shredded
- 1 ham hock with meat or possibly ham bone plus 1 pound ham scraps
- 3 quarts. water
- 3 onions, minced
- Dash of cayenne
- Salt to taste
Directions
- Boil ham in water with pepper and onions. If ham has been previously cooked, 2 hrs will be sufficient; if not, 3 hrs. Don't add in salt till later, as the ham is so salty. More may not be necessary. Add in potatoes and cabbage and tomatoes and simmer 1 hour longer. Skim off excess fat before serving.
