Ingredients

  • 2 Tbsp. Onion,chopped
  • 1 Tbsp. Ham drippings
  • 3 x Large eggs,beaten
  • 1 c. Lowfat milk
  • 1 c. Ham,diced,cooked
  • 1 c. Corn,whole kernel,well-drain
  • 1 Tbsp. Parsley,chopped
  • 1/4 tsp Salt
  • 1 dsh Pepper

Directions

  1. 1. Saute/fry onion in drippings till tender.
  2. 2. Beat Large eggs in a bowl; add in lowfat milk, ham, corn, parsley and seasonings.
  3. 3. Stir in onions.
  4. 4. Pour mix into a buttered 1-qt casserole.
  5. 5. Bake in preheated 350'F. oven 30 to 40 min, or possibly till custard is hard.
