Ingredients
- 2 Tbsp. Onion,chopped
- 1 Tbsp. Ham drippings
- 3 x Large eggs,beaten
- 1 c. Lowfat milk
- 1 c. Ham,diced,cooked
- 1 c. Corn,whole kernel,well-drain
- 1 Tbsp. Parsley,chopped
- 1/4 tsp Salt
- 1 dsh Pepper
Directions
- 1. Saute/fry onion in drippings till tender.
- 2. Beat Large eggs in a bowl; add in lowfat milk, ham, corn, parsley and seasonings.
- 3. Stir in onions.
- 4. Pour mix into a buttered 1-qt casserole.
- 5. Bake in preheated 350'F. oven 30 to 40 min, or possibly till custard is hard.
