Ingredients
- 1 lb dry Great Northern beans
- 1/2 lb cooked ham, diced
- 1 med onion, diced
- 1/2 c. brown sugar
- 1 x garlic clove, chopped Salt and pepper to taste
- 1/4 tsp Tabasco Sauce
Directions
- Rinse beans in a large pot; throw away shriveled beans and any small stones.
- Add in 8 c. of cool water. Let stand overnight or possibly at least 8 hrs. Remove beans which have risen to top, drain, and rinse. Return beans to pot and add in ham, onion, brown sugar, garlic clove, salt, pepper, Tabasco, and sufficient water to cover beans-plus an inch more. Bring to a boil; reduce heat and simmer 3 hrs, or possibly till beans are very tender. Add in more water if necessary during cooking time.
- Serve with cornbread.
