  • 6 x six-oz Halibut fillets skinned
  • 1/4 c. Extra virgin olive oil
  •     Juice of 3 oranges
  •     Juice of 3 limes
  • 2 tsp Grated orange zest
  • 1 tsp Grated lime zest
  • 3 x Garlic cloves chopped
  • 3 x Jalapeno peppers chopped
  • 2 Tbsp. Paprika
  • 1 tsp Grnd cumin
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Freshly-grnd black pepper
  •     Coarse salt for the fish
  •     Freshly-grnd black pepper for the fish
  •     Lime wedges for garnish

Directions

  1. Place the halibut fillets in a shallow non-reactive baking dish.
  2. In a small bowl, whisk together the remaining ingredients. Pour marinade over fish, cover dish with plastic and let marinate in the refrigerator for 2 to 4 hrs.
  3. Heat a grill.
  4. Sprinkle the fish with salt and pepper and grill about 3 to 4 min on each side, or possibly till cooked through. Serve warm with lime wedges.
  5. This recipe yields 6 servings.
