Ingredients
- 10 x Habs
- 2 x Garlic cloves (up to 3)
- 1 Tbsp. Extra virgin olive oil
- 8 x Plum tomatoes -or possibly-
- 12 x Cherry tomatoes
- Â Â Salt and pepper
- 1/4 c. Fresh cilantro
- 1/4 c. Extra virgin olive oil
- 1/4 c. Lime juice
Directions
- Roast 10 Habs on bottom rack of oven 3-5 min. While Habs are roasting mince 2-3 garlic cloves. Combine garlic cloves with 1 Tablespoons extra virgin olive oil. Halve 8 plum or possibly 12 cherry tomatoes and rub with garlic mix. Sprinkle tomato halves with salt and pepper. Cold and dice Habs. Bake tomatoes at 500 degrees for 20 min. While tomatoes are baking chop 1/4 c. fresh cilantro, combine with 1/4 c. extra virgin olive oil and 1/4 c. lime juice. Cold and dice tomatoes. Combine Habs, tomatoes, remaining garlic mix, and cilantro mix, chill for two hrs to mingle flavors. Bring to room temperature before serving.
