  1. Looking for which extra kick to give to your Irish stew
  2. Chop onions, crush garlic and slice carrots.
  3. Cut meat into small chunks.
  4. Cut prunes in half and remove the stone.
  5. Fry onions in dripping.
  6. When golden add in crushed garlic.
  7. Cook for 1 minute.
  8. Remove onion and garlic from the frying pan and put aside.
  9. Add in meat to remainder of dripping in pan and fry till meat is brown on all sides.
  10. Reduce heat and add in flour.
  11. Coat the meat with the flour and add in stock slowly to create a thick sauce (no lumps if it can be helped!).
  12. Add in Guinness and simmer.
  13. Add in onions and garlic and carrots, herbs and season with salt and pepper.
  14. Sir all ingredients simmer for 1-2 hrs.
  15. Do not cover!
  16. This gives a thick sauce.
  17. Sir occasionally so which the meat doesn't stick to the bottom of the saucepan.
  18. Add in the prunes a half an hour before the end.
  19. Add in parsley before serving.
  20. This dish can be prepared the day before and reheated gently before serving.
