Guilt Free Stuffed Peppers

This is not only one of my all time favorites to make, but also one of my favorite things I make to eat.

Ingredients

  • 6-8 green peppers
  • 3 Cups of cooked brown rice
  • 3 medium size white onions
  • 4-5 cloves of minced garlic
  • 1lb ground turkey
  • 3-4 cans of tomatoe soup
  • s/p to taste
  • Hot or cold my favorite tip add a sprinkle of red wine vinegar

Directions

  1. Fill large pot with water and bring to a boil
  2. Cut green peppers in half and remove seeds and stems
  3. Once water comes to a boil place peppers in and cook 5-6 min
  4. Rince under cold water to stop cooking process and place peppers on towel to dry
  5. Cook ground turkey adding s/p to taste
  6. While cooking ground turkey dice onions and garlic
  7. Cook rise ether stove top/or microwave
  8. Add onions and garlic to cooked ground turkey till garlic is fragrant and onions are tender on stove low to med heat.
  9. Preheat oven to 350
  10. Add 1 can of tomatoe soup and warm through
  11. In a lg bowl place cooked rice and meat mixture and add 2 additional cans of tomatoe soup
  12. Using a large caserole dish, place pepppers face up and fill generously each half with mix
  13. Cover with foil and bake in oven 45 minutes
  14. Remove foil and cook an additional 20-30 until brown on top
