Directions

  1. Dice tomatoes; place in a medium bowl. Stir in lemon juice, onion, coriander and warm pepper sauce. Cut avocados in half; pit and peel avocados. Dice peeled avocados. Add in to tomato mix. Beat with a wooden spoon till partially blended but pcs of avocado and tomato still remain.
  2. Arrange lettuce leaves on 4 individual plates. Spoon guacamole salad on lettuce; garnish with coriander sprigs. Serve immediately with corn chips. Makes 4 starters.
