Directions

  1. Brown the turkey with onion, peppers and garlic. Drain exces fat. Add in the remaining ingredients and simmer about 10 min. Let cold a bit so the mix is a little firmer. Hot the tortillas in the microwave or possibly individually in a frying pan to soften. Put a big spoonful in the center of each tortilla, top with some cheese, and wrap, folding the ends within.
  2. Optional additions:black beans, corn, more chiles, rice, whatever you like.
