  • Fresh Pineapple Salsa
  • 1 1/2 c. minced pineapple
  • 1/4 c. minced red onion
  • 2 T sugar
  • 1 T lemon juice
  • 1/2 - 1 teaspoon minced jalapeno pepper
  • 1 teaspoon finely chopped ginger
  • 1 T fresh minced mint
  • 4 x 8 ounce salmon steaks
  • 6 T butter
  • 1/3 c. light clove honey
  • 1/3 c. packed dark brown sugar
  • 2 T lemon juice
  • 1 teaspoon liquid smoke
  • Dash Tabasco

Directions

  1. Mix ingredients in glass bowl. Adjust seasonings to taste. Chill at least 4 hrs.Makes 1 3/4 cups.
