Ingredients

  • 4 bone-in, 1 inch thick, pork chops
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 ripe peaches, peeled and chopped
  • 2 Roma tomatoes, seeded and chopped
  • 1/3 cup chopped Vidalia onion
  • 1 small jalapeño pepper, minced (more or less depending on how much heat you like)
  • 1 tablespoon chopped cilantro
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon honey
  • 1/4 teaspoon chili powder
