Grilled Lemon Chicken Recipe

Ingredients

  • 3/4 c. freshly-squeezed lemon juice (4 lemons)
  • 3/4 c. good extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp freshly-grnd black pepper
  • 1 Tbsp. chopped fresh thyme leaves (or possibly 1/2 tspn dry thyme)
  • 2 lb boneless skinless chicken breasts halves Satay Dip (see recipe)

Directions

  1. Whisk together the lemon juice, extra virgin olive oil, salt, pepper, and thyme. Pour over the chicken breast in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hrs or possibly overnight.
  2. Heat a charcoal grill and cook the chicken breast for 10 min on each side, till just cooked through. Cold slightly and cut diagonally in 1/2-inch thick slices. Skewer with wooden sticks.
