Directions

  1. Combine 2-tbsp. chili pwdr, 2 tbsp. cilantro, oregano, cumin and garlic pwdr in small bowl. Coat lamb chops with mix and marinate for 6-8 hrs. Cover and chill.
  2. Prepare Chili-Cilantro Sauce.
  3. Grill lamb chops at medium-high for about 5-6 min per side.
  4. Pour sauce over chops.
  5. Chili-Cilantro Sauce:Heat 1 tbsp. oil in medium saucepan. Add in shallots and garlic and saute/fry for 2 min.
  6. Add in wine, beef stock and 1 tbsp. chili pwdr. Boil till sauce reduces to about 3/4 c..
  7. Remove sauce from heat and stir in butter 1 piece at a time, whisking to incorporate. Stir in minced cilantro.
