Grilled Corn with Chili Powder and Lime

Grilled corn is always a welcome addition to a meal in our house but this corn is extra special. I served this as a side at a Mexican themed dinner party and it got rave reviews.

Ingredients

  • 4 ears shucked corn
  • 1/2 lime
  • 1 teaspoon chili powder
  • 1 1/4 teaspoons kosher salt
  • black pepper
  • olive oil

Directions

  1. Cut corn pieces in half to make 8 pieces. Put corn in a plastic zip lock bag (gallon size). Drizzle olive oil liberally over corn and add salt and pepper to bag. Shake well to coat corn.
  2. Grill corn over high heat until lightly blackened in places.
  3. Remove from heat and place corn in a 9x13 glass pyrex dish or paper bag. Squeeze lime over corn and sprinkle with chili powder and a little more coarse salt. Close bag and shake well or roll corn around in dish to coat well.
  4. Serve immediately.
