  • 4 x Corn ears
  • 2 Tbsp. Extra virgin olive oil Salt to taste
  • 3 Tbsp. Unsalted butter Juice of 1 lime
  • 1 Tbsp. Coarsely-cracked black pepper

Directions

  1. Preheat the grill.
  2. Brush corn with extra virgin olive oil, season with salt, place on the grill and grill till lightly golden brown on all sides. Remove from the grill. With a sharp knife, cut the niblets from the cobs.
  3. Heat the butter in a medium skillet and add in the lime juice. Add in the corn niblets and cook for one minute. Add in the black pepper.
  4. This recipe yields 4 servings.
