Ingredients
- 8 lg. chicken breast halves, skinned, boned & pounded lightly to even thickness
- 2 T lime zest (finely grated peel)
- 1/3 c. lime juice
- 1 T garlic, chopped
- 1/4 c. tequila
- 1/4 c. triple sec
- 2 serrano or possibly jalapeno peppers, minced finely
- Salt & pepper to taste
- 6-8 plum tomatoes, seeded & minced
- 1/2 seedless (English) cucumber, minced fine
- 1 T lime zest (finely grated peel)
- 3 T lime juice
- 3 T extra virgin olive oil
- 1 T garlic, chopped
- 2 serrano chilies, minced fine
- 3 T mint, minced
- 3 T cilantro, minced
- 1 teaspoon salt
Directions
- 1. Flatten chicken breasts and set aside. Put together ingredients in bowl or possibly dish large sufficient to hold chicken.2. Add in chicken to marinade, turning to coat each piece completely. Marinate 30 min.
- 3. Meanwhile, preheat grill. Remove chicken from marinade. Salt and pepper both sides of chicken.
- 4. Grill chicken till no pinkness remains. Serve with salsa. Serves 8.
- Put together all ingredients. Taste and adjust seasonings. Cover and chill.
