This is another tasty spice paste for my spicy grilled chicken recipe. Just follow the cooking directions for the Spicy Grilled Chicken recipe (linked below) but substitute this spice paste. I liked the Cilantro/Citrus spice paste in the main recipe slightly better, which is why I give that one 5 hearts and this one 4. But both are delicious. This one does not require a blender...so if you don't have one handy this might be easier.
Ingredients
- For Brine:
- 1/2 cup sugar
- 1/2 cup salt
- 8 chicken thighs or legs (or mixed pieces)
- Freshly ground pepper
- For the Spice Paste
- 1/4 cup red wine vinegar
- 1/4 cup distilled white vinegar
- 1/4 cup peanut oil
- 1 Tbsp ground cumin
- 1 Tbsp curry powder
- 1 Tbsp crushed coriander seeds
- 1 Tbsp paprika
- 1 Tbsp packed brown sugar
- 2 garlic cloves, minced
Directions
- Mix all the Spice Paste ingredients above together in a bowl. Then follow the directions on the Spice Grilled Chicken recipe linked below (including the brining)
