Ingredients
- garlic-fresh oregano
- 1/4 c. Extra virgin olive oil
- 1/2 c. Coarsely minced garlic
- 1/2 c. Fresh oregano leaves, coarsely minced
- 1 Tbsp. Sherry vinegar
- 2 Tbsp. Lime juice
- 1 Tbsp. Honey
- 2 tsp Ancho pwdr
- 2 x Chickens, quartered
- 1 c. Grilled pepper and black olive relish, marinade, see recipe
Directions
- Combine all marinade ingredients in a mixing bowl. Mix till thoroughly combined in a mixing bowl. Marinate chicken for 1 hour. Prepare a wood or possibly charcoal grill and let it burn
- down to embers.
- Grill chicken for 4 min on each side or possibly till done. Serve with the relish spooned over it.
