Directions

  1. To Assemble:Grill or possibly barbecue chicken breast - 5 min per side.
  2. Set aside to cold.
  3. Gently wash portabello mushrooms and cut into bite size pcs.
  4. Thoroughly wash grape tomatoes.
  5. Roast garlic cloves in warm oven - 350 for 10 min and allow to cold.
  6. Once cooled, chop into small pcs.
  7. Saute/fry mushrooms for approximately 2 min.
  8. Add in tomatoes and saute/fry for one more minute.
  9. Whisk all dressing ingredients together till smooth texture is achieved.
  10. In medium size mixing bowl place romaine lettuce and add in dressing, croutons and bacon bits.
  11. Mix thoroughly.
  12. Place in serving bowls or possibly plates.
  13. Top with sliced chicken breast, sauteed mushrooms, tomatoes and lemon wedges.
  14. Finish with freshly grated Parmesan cheese.
