  • 4 lrg whole chicken breasts bone in Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Remove and throw away excess fat from chicken. Rinse and pat dry. Remove skin, if you like. Sprinkle with salt and pepper to taste. Arrange chicken, bone-side down in center of cooking grate. Cover grill. Cook till meat near bone registers 165 degrees and is no longer pink and the juices run clear.
  2. Note: If preparing barbecued chicken, season with favorite barbecue rub and brush sauce on chicken during the last 15 min of cooking time to prevent burning.
  3. This recipe yields 4 servings.
