- 40 gm glutinous rice flour
- 20 gm rice flour
- 8 gm wheat flour / wheat starch
- 12 gm plain flour
- 35 gm caster sugar
- 160 ml milk
- 35 ml condensed milk
- 30 ml vegetable oil (such as sunflower oil or canola oil)
- 1½ tsp matcha powder
- 3 Tbsp cooked glutinous rice flour, for coating
- Ingredients:
- 20 gm cake flour
- 20 gm custard flour
- 20 gm milk powder
- 55 gm caster sugar
- 30 gm whisked egg
- 30 ml condensed milk
- 80 gm coconut cream
- 45 gm butter, melted

%20was%20a%20hearty%20birthday%20gift%20from%20my%20loved%20ones%20in%20the%20family.%20I%20treasure%20it%20so%20much.%20With%20it,%20I%20made%20these%20green%20tea%20snow%20skin%20mooncakes%20with%20custard%20filling.%20The%20matcha%20powder%20was%20bought%20from%20Japan%20a%20few%20months%20ago%20when%20we%20travelled%20there.%20I%20adjusted%20all%20the%20amount%20of%20flours%20in%20order%20to%20show%20off%20its%20beautiful%20green%20colour.%20The%20deep%20and%20vibrant%20green%20colour%20goes%20so%20well%20with%20the%20bright%20yellowish%20filling.%20Do%20they%20look%20similar%20to%20those%20pandan%20snowskin%20mooncakes%20I%20made%20before?%20Although%20both%20kinds%20of%20snowskin%20mooncakes%20are%20in%20green%20and%20yellow,%20the%20texture%20and%20taste%20of%20both%20end%20products%20are%20totally%20different.%20Which%20one%20would%20you%20like%20most?%20I%20like%20both.%3C/p%3E%3Cp%3EHow%20to%20prepare%20the%20custard%20filling%3C/p%3E%3Cp%3EHow%20to%20prepare%20the%20snowskin%20dough%3C/p%3E%3Cp%3EHow%20to%20ensemble%20mooncakes%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ETo%20prepare%20the%20filling%EF%BC%9ASieve%20all%20flours%20in%20a%20large%20mixing%20bowl.%20Add%20sugar.%20Stir%20in%20the%20whisked%20egg,%20condensed%20milk%20and%20coconut%20cream.%20Combine%20very%20well.%20Add%20butter.%20Transfer%20into%20a%20large%20and%20shallow%20pan.%20Cover%20with%20foil%20and%20steam%20for%2015%20to%2020%20minutes%20over%20medium-high%20heat.%20Let%20it%20cool%20down%20and%20chill%20in%20fridge%20for%20later%20use.%3C/p%3E%3Cp%3ETo%20prepare%20the%20snowskin:%20Sieve%20all%20flours%20in%20a%20large%20mixing%20bowl.%20Add%20sugar%20and%20combine%20well.%20Mix%20milk%20with%20condensed%20milk%20well.%20Pour%20into%20the%20flour%20mixture.%20Stir%20in%20vegetable%20oil.%20Drain%20through%20a%20fine%20sieve%20into%20a%20large%20and%20shallow%20pan.%20Cover%20with%20foil%20and%20steam%20for%2015%20to%2020%20minutes%20over%20medium%20high%20heat.%20Let%20it%20cool%20down.%3C/p%3E%3Cp%3EDivide%20the%20filling%20into%208%20portions,%20each%20in%2032%20grams.%20Roll%20each%20into%20a%20ball.%3C/p%3E%3Cp%3EScrape%20out%20the%20snowskin%20dough.%20Knead%20in%20matcha%20powder%20evenly.%20Divide%20into%208%20portions,%20each%20in%2033%20grams.%20With%20a%20rolling%20pin,%20roll%20each%20out%20into%20a%20disc.%3C/p%3E%3Cp%3ETo%20ensemble%20mooncakes:%20Wrap%20the%20filling%20with%20the%20snowskin%20dough%20tightly%20and%20seal%20the%20edges.%20Coat%20with%20cooked%20glutinous%20rice%20flour.%20Shake%20away%20the%20excess.%20Press%20in%20a%20floured%20mooncake%20mould.%20Tap%20and%20remove%20it.%20Store%20in%20an%20air-tight%20container%20covered%20with%20a%20kitchen%20paper.%20Chill%20in%20freezer%20overnight.%20Transfer%20the%20mooncakes%20into%20fridge%20for%202%20hours%20before%20serving.%3C/p%3E%3Cp%3ENotes%EF%BC%9A%3C/p%3E%3Cp%3ECooked%20glutinous%20rice%20flour%20is%20available%20at%20Asain%20grocers.%20You%20can%20make%20it%20yourself%20though.%20Simply%20cook%20the%20flour%20in%20a%20frypan%20without%20any%20oil%20over%20medium-low%20heat,%20stirring%20occasionally.%20When%20smoke%20releases%20and%20the%20flour%20turns%20light%20yellow,%20it%E2%80%99s%20cooked.%20Remove%20from%20the%20heat%20and%20let%20it%20cool%20down%20completely.%20Then%20you%20can%20use%20it%20to%20coat%20your%20mooncakes.%3C/p%3E%3Cp%3EFor%20steaming%20the%20snowskin%20and%20filling,%20if%20you%20can%E2%80%99t%20taste%20any%20raw%20flour,%20it%E2%80%99s%20done.%3C/p%3E%3Cp%3EBy%20kneading%20the%20matcha%20powder%20into%20cooked%20snowskin%20dough,%20you%E2%80%99ll%20get%20the%20best%20flavour%20and%20colour.%20Yet,%20it%20needs%20more%20patience%20to%20knead%20in%20evenly.%3C/p%3E%3Cp%3EYou%20might%20wrap%20in%20a%20cooked%20salted%20egg%20yolk%20if%20you%20like.%20Salted%20egg%20yolks%20are%20available%20at%20Asian%20grocers.%20Or%20you%20make%20some%20in%20advance.%3C/p%3E%3Cp%3EThe%20snowskin%20mooncakes%20can%20be%20stored%20in%20freezer%20up%20to%20a%20few%20weeks.%20Before%20serving,%20just%20transfer%20the%20mooncakes%20to%20fridge%20for%20about%203%20hours,%20until%20they%20become%20soften%20a%20bit.%3C/p%3E){kind=link}
