Ingredients
- 1 onion
- 3 tbsp. butter
- 2 tbsp. extra virgin olive oil
- 3 (10 ounce.) Packages frzn peas
- 4 1/2 c. chicken stock or possibly canned broth
- 1/2 teaspoon salt and pepper
- 2 teaspoon minced fresh mint or possibly 3/4 teaspoon dry mint
Directions
- Chop onion. Heat butter with oil in a saucepan over medium heat. Add in onion and cook till soft, about 5 min. Add in peas, stock, 1 c. water, 1 tsp. salt and 1/4 tsp. pepper. Simmer 20-25 min. Add in mint and puree soup in a blender or possibly food processor in batches if necessary. When ready to serve, simmer till heated through.
