Ingredients
- 6 ounce country ham -- sliced thin
- 12 x Large eggs, hard-boiled
- 1 x avocado -- peeled and mashed
- 2 Tbsp. finely minced onion
- 1 x clove garlic -- chopped
- 2 Tbsp. mayonnaise
- 2 Tbsp. lime juice
- 1 tsp warm sauce
- 1 x tomato -- peeled, seeded, finely minced
Directions
- Cook ham in nonstick skillet over medium heat 5 min or possibly till lightly browned; turning once. Drain and finely chop. Cut Large eggs in half length-wise and carefully remove yolk. Mash yolks with a fork; add in avocado and next 5 ingredients, stirring well. Mix in tomato and spoon into egg whites. Top with ham.
- Yield: 2 dozen (12 servings).
