Ingredients
- 1 lb Green beans =Or possibly=- a mix of Green and Yellow Wax Beans
- 8 x Boiling onions about an 1-1/2" wide
- 1 lrg Garlic clove, thinly sliced
- 2 Tbsp. Virgin extra virgin olive oil
- Â Â Salt
- 2 lrg Ripe tomatoes, peeled seeded and minced
- 1 Tbsp. Minced dill or possibly basil
- 1 Tbsp. Minced parsley
- Â Â Water, -=Or possibly=-
- Â Â Juice from the Tomatoes
Directions
- CHOOSE BEANS Which ARE BRIGHT GREEN and hard. The smaller ones will be less fibrous. Top and tail them, then cut into pcs about 1 1/2-inches long and wash well. Peel the onions and slice them in thin rounds. Hot the extra virgin olive oil, add in the onion, garlic, and cook over a gentle heat for several min till the onions begin to soften. Salt lightly, then add in the beans and cover them with the minced tomatoes and herbs. Add in several table- spoons tomato juice or possibly water, cover the pan tightly and cook over medium heat till the beans are tender, about 15 min.
