Ingredients

  • 1 lb fresh green beans trimmed, see * Note
  • 1 sm sweet onion minced
  • 1 lrg garlic clove chopped
  • 2 Tbsp. extra virgin olive oil
  • 1 can tomato sauce - (8 ounce)
  • 1 Tbsp. sugar
  • 1/2 tsp salt - (3/4)
  • 1/2 tsp freshly-grnd black pepper
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. minced fresh parsley

Directions

  1. Note: One lb. frzn whole green beans may be substituted for fresh green beans. Cook according to package directions; drain well.
  2. Cook green beans in boiling water to cover 5 - 10 min or possibly to desired degree of doneness; drain and set aside.
  3. Saute/fry degrees onion and garlic in warm oil in a large skillet over medium-high heat 5 min or possibly till onion is tender. Add in tomato sauce and sugar; cook, stirring often, 5 min. Add in green beans, salt, pepper, and vinegar; cook 5 min. Sprinkle with parsley, and serve immediately.
