Greek Style String Beans Recipe

Ingredients

  • 2 lb String beans
  • 1 c. Extra virgin olive oil
  • 1 can Tomato sauce (8 ounce)
  • 3 x Fresh tomatoes
  • 3 lrg Onions, minced
  • 1/2 c. Minced celery Parsley to taste Oregano to taste Garlic pwdr to taste Mint leaves to taste

Directions

  1. Cut off ends of beans and wash in cool water. Cut in pcs or possibly slice lengthwise (French style). Saute/fry onions; add in string beans and all ingredients. Add in sufficient water (about 1 c.) to cook string beans.
  2. NOTE: Other vegetables which can be prepared this way are fava beans, potatoes, okra, eggplant, chick peas. A combination of string beans, potatoes, carrots and celery makes a tasty one-dish meal.
