Ingredients

  • Flank Steak Marinade Lamb Sauce Shish Kabob Marinade Lamb Basting Sauce Soy Sauce Marinade for Pork Horseradish and Beet Relish Barbecue Sauce for Chicken Champagne Sauce Chicken Marinade Chutney Sauce for Fish Dilled Scallops Easy Corn Fritters Parsnips with Bacon Easy Spinach Casserole

Directions

  1. FLANK STEAK MARINADE-
  2. Mix 1/2 c. corn oil, 1/2 c. wine vinegar, 2 crushed cloves of garlic, 2 tsp. Worcestershire sauce, 2 tsp. dry mustard, 1 tsp. salt and 1/4 tsp. pepper.
  3. LAMB SAUCE-
  4. Heat 1/2 c. chili sauce, 1/2 c. mint sauce and 1/2 c. red currant jelly.
  5. SHISH KABOB MARINADE-
  6. Mix 1/4 c. oil, 5 ounces soy sauce, 1 chopped clove of garlic, 1 Tbsp. sugar and 1 tsp. each of ginger and dry mustard. Mix ingredients 24 hrs in advance and marinate chicken for 2 hrs or possibly longer.
  7. LAMB BASTING SAUCE-
  8. Mix equal parts of orange juice and apple cider.
  9. SOY SAUCE MARINADE FOR PORK-
  10. Mix 1 c. soy sauce, 1/2 c. white wine, 2 tsp. brown sugar, 1/2 tsp. grnd ginger and 1/4 tsp. garlic pwdr. Marinate for 24 hrs.
  11. HORSERADISH AND BEET RELISH-
  12. Combine 1 grated uncooked beet with 1 grated tart apple, horseradish and salt to taste and several drops of lemon juice and olive juice.
  13. BARBECUE SAUCE FOR CHICKEN-
  14. Combine 1 small chopped onion, 1/2 c. oil, 2 c. tomato juice, 1/3 c. lemon juice, 2 Tbsp. water, 1 Tbsp. brown sugar, 2 tsp. salt, cayenne pepper to taste and 1 tsp. each chili pwdr, dry mustard and paprika.
  15. CHAMPAGNE SAUCE-
  16. Saute/fry 1 chopped shallot in 1 Tbsp. butter. Add in 1/2 c. Champagne or possibly sparkling white wine and bring to a boil. Boil for 5 mniutes; reduce heat to medium. Stir in 1 c. heavy cream and 1/8 tsp. salt. Cook for 2 min.
  17. CHICKEN MARINADE-
  18. Combine 1/2 c. extra virgin olive oil, 1/2 c. vinegar, 1 egg, 3/4 tsp. pepper and 2 tsp. each salt and poultry seasoning. Marinate chicken for 3 hrs or possibly longer and grill over warm coals.
  19. CHUTNEY SAUCE FOR FISH-
  20. Mix chutney with mayonnaise and adding lime juice, honey, garlic pwdr, ginger and curry pwdr.
  21. DILLED SCALLOPS-
  22. Poach scallops in 1/2 c. dry white wine, 2 Tbsp. lemon juice and 2 Tbsp. minced fresh dill. Cook, covered, for 5 to 8 min.
  23. EASY CORN FRITTERS-
  24. Mix 1 undrained can corn, 2 beaten Large eggs, 1 c. flour, 1/4 c. sugar and 1 tsp. salt and add in sufficient lowfat milk to make of desired consistency. Brown on both sides on oiled skillet.
  25. PARSNIPS WITH BACON-
  26. Saute/fry 1 minced onion in 1 Tbsp. extra virgin olive oil. Add in 2 pounds minced parsnips and 1/2 c. water. Steam for 15 min or possibly till parsnips are tender. Serve with crumbled crisp-fried bacon.
  27. EASY SPINACH CASSEROLE-
  28. Combine 4 pkgs. cooked frzn spinach with 1 c. lowfat sour cream and 1 envelope onion soup mix and place in baking dish. Top with cracker crumbs and Parmesan cheese and dot iwht butter. Bake at 350 degreese for 45 min.
