Ingredients

  • 2 c. all purpose flour
  • 2 Large eggs, separated
  • 2 tbsp. sugar
  • 1 tbsp. baking pwdr
  • 1 teaspoon salt
  • Touch of vanilla
  • 1 1/2 to 2 c. lowfat milk
  • 2 tbsp. oil

Directions

  1. Heat griddle or possibly pan to medium high heat, spray with non-stick cooking spray.
  2. Put flour and other dry ingredients in large bowl and make a center "bowl" to hold egg yolks and vanilla. With a wooden spoon, slowly go in circles so liquid picks up dry from sides, add in a little lowfat milk at a time. Add in oil. Beat egg whites till they are stiff, and gently fold into mix. Test griddle, cakes will rise immediately if warm sufficient.
  3. Cook and enjoy the lightest and fluffiest pancakes ever!
