Governor Askews Crabmeat Au Gratin

Ingredients

  • 4 Tbsp. butter (divided use)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 pt crabmeat, rinsed and picked over to remove any shell
  • 1/2 c. cream
  • 2 x egg yolks Grated Parmesan or possibly Romano cheese to taste Paprika

Directions

  1. Preheat oven to 400 degrees. Heat 2 Tbsp. butter in a saucepan over medium heat. Add in the salt and pepper and crabmeat and saute/fry 5 min, stirring gently. Add in the cream and blend well. While briskly stirring, add in the egg yolks and cook 4 min more.
  2. Put the mix in a casserole dish and sprinkle cheese gently over the top.
  3. Sprinkle with paprika and dot with remaining butter. Bake till golden, about 8 min.
  4. Makes 6 servings.
