  • 1 c. All purpose flour
  • 2/3 x Sugar
  • 2 Tbsp. Unsweetened cocoa
  • 2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Lowfat milk
  • 1/2 c. Minced walnuts
  • 2 Tbsp. Melted butter or possibly margarine
  • 1 tsp Vanilla Brown Sugar Topping, (recipe follows)
  • 1 c. Boiling water Whipped cream, for garnish
  • 1/2 c. Packed brown sugar
  • 1/4 c. Sugar
  • 3 Tbsp. Unsweetened cocoa
  • 1/4 tsp Salt
  • 1 tsp Vanilla

Directions

  1. Soak top and bottom of 3 1/4 qt clay cooker in water for 15 minutes. and drain. Pat dry and grease inside bottom and sides of cooker.
  2. Mix flour, sugar, cocoa, baking pwdr, and salt in a large bowl. Add in lowfat milk, walnuts, butter and vanilla; stir till blended. Spread in cooker.
  3. Make brown sugar topping.
  4. Sprinkle brown sugar topping over batter. Pour in boiling water without stirring.
  5. Place cooker in cool oven. Set temp. at 375 and bake till top is hard, about 1 hour. Serve pudding warm, with whipped cream.
  6. Brown Sugar Topping: Mix all ingredients.
  7. Note: In a sense, this is a warm fudge version of pudding - a chocolate nut pudding which makes it's own dark chocolate sauce. Yum.
